Ingredients
  

For the Pie Crust
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg beaten
  • 2 tablespoons cold water
For the Filling
  • 2 cups mashed sweet potatoes cooked and cooled
  • 1 can sweetened condensed milk
  • 2 large eggs beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Method
 

Prepare the Pie Crust
  1. In a mixing bowl, combine the flour, butter, and sugar. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  2. Add the beaten egg and cold water. Mix until the dough forms a ball. Wrap in plastic wrap and refrigerate for 30 minutes.
Prepare the Filling
  1. In a large bowl, combine the mashed sweet potatoes, sweetened condensed milk, beaten eggs, vanilla extract, cinnamon, nutmeg, and salt. Mix until smooth.
Assemble the Pie
  1. Preheat your oven to 350°F (175°C).
  2. Roll out the chilled pie crust and fit it into a 9-inch pie dish. Trim the excess dough.
  3. Pour the sweet potato filling into the prepared crust, smoothing the top with a spatula.
Bake the Pie
  1. Bake the pie in the preheated oven for 45 minutes, or until the filling is set and a toothpick inserted in the center comes out clean.
  2. Remove the pie from the oven and let it cool at room temperature.
Serve
  1. Slice the pie and serve it warm or chilled. Optionally, top with whipped cream before serving.
