Ingredients
  

For the Base
  • 1 pound gnocchi
  • 2 cups cherry tomatoes halved
  • 1 cup bell pepper diced
  • 1 tablespoon olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Topping
  • 1 cup shredded mozzarella cheese or any cheese of choice
  • 1/4 cup fresh basil chopped for garnish

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the gnocchi, cherry tomatoes, bell pepper, olive oil, salt, and black pepper. Toss until everything is well coated.
  3. Spread the mixture evenly on a large sheet pan.
  4. Roast in the preheated oven for about 20 minutes, stirring halfway through, until the vegetables are tender and the gnocchi are lightly browned.
  5. Remove the pan from the oven and sprinkle the mozzarella cheese evenly over the top.
  6. Return the pan to the oven and roast for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven, garnish with fresh basil, and serve warm.
