Ingredients
  

For the Base
  • 4 medium beets roasted and diced
  • 4 cups mixed greens such as arugula, spinach, and kale
For the Dressing
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey
  • 1 pinch salt
  • 1 pinch pepper
For the Topping
  • 1 cup feta cheese crumbled
  • 1/4 cup walnuts chopped and toasted

Method
 

Roasting the Beets
  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet in aluminum foil and place them on a baking sheet.
  3. Roast the beets in the preheated oven for 45 minutes, or until tender when pierced with a fork.
  4. Remove from the oven, unwrap, and let cool slightly before dicing.
Preparing the Salad
  1. In a large bowl, combine the mixed greens and roasted beets.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
  3. Drizzle the dressing over the salad and toss gently to combine.
  4. Top the salad with crumbled feta cheese and toasted walnuts.
  5. Serve immediately and enjoy!
