Ingredients
  

For the Base
  • 1 loaf French bread cut into cubes
  • 1 cup pumpkin puree
  • 4 large eggs
  • 2 cups milk whole or milk alternative
  • 1 tablespoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
For the Topping
  • 1 cup pecans chopped
  • 1/4 cup brown sugar
  • 2 tablespoons butter melted
  • 1/2 teaspoon cinnamon

Method
 

Prepare the Casserole
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the pumpkin puree, eggs, milk, vanilla extract, pumpkin pie spice, and salt until well combined.
  3. Add the cubed French bread to the mixture and gently fold until all the bread is coated. Let it sit for about 10 minutes to absorb the liquid.
Prepare the Topping
  1. In a separate bowl, mix the chopped pecans, brown sugar, melted butter, and cinnamon together until the nuts are well coated.
  2. Sprinkle the pecan topping evenly over the soaked bread mixture.
Bake the Casserole
  1. Pour the casserole mixture into a greased 9x13 inch baking dish.
  2. Bake in the preheated oven for 45-50 minutes or until the top is golden brown and a knife inserted in the center comes out clean.
Serve
  1. Remove from the oven and let it cool for a few minutes before slicing.
  2. Serve warm, optionally topped with maple syrup or whipped cream.

Notes
