Ingredients
  

For the Potatoes
  • 2 pounds Yukon Gold potatoes cut into wedges
  • 1 cup chicken or vegetable broth
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Garnish
  • 2 tablespoons fresh parsley chopped
  • 1 lemon lemon wedges for serving

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the olive oil, lemon juice, oregano, salt, and black pepper.
  3. Add the potato wedges to the bowl and toss them in the mixture until well coated.
  4. Transfer the coated potatoes to a baking dish and pour the chicken or vegetable broth over them.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  6. After 30 minutes, remove the foil and bake for an additional 15 minutes or until the potatoes are golden brown and tender.
  7. Once cooked, remove from the oven and let cool slightly.
  8. Garnish with fresh parsley and serve with lemon wedges on the side.

Notes
