  • 4 cups sweet potatoes peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter melted
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup milk or cream
  • 2 large eggs
For the Topping
  • 1 cup pecans chopped
  • 1/2 cup oats
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter melted

Method
 

Prepare the Sweet Potato Base
  1. In a large bowl, combine the cubed sweet potatoes, brown sugar, melted butter, cinnamon, nutmeg, vanilla extract, milk, and eggs. Mix until well combined.
  2. Transfer the sweet potato mixture into the crockpot, spreading it evenly.
Make the Topping
  1. In a separate bowl, mix together the chopped pecans, oats, brown sugar, and melted butter until combined.
  2. Sprinkle the topping evenly over the sweet potato base in the crockpot.
Cook the Casserole
  1. Cover the crockpot and set it to cook on low for 4 hours or on high for 2 hours.
  2. Check for doneness by inserting a fork into the sweet potatoes; they should be tender.
Serve
  1. Once cooked, turn off the crockpot and let the casserole sit for 10-15 minutes before serving.
  2. Scoop out and serve warm as a side dish or dessert.
